History

Corn was domesticated from teosinte in Mexico over 9,000 years ago and became the foundation of Mesoamerican civilizations like the Maya and Aztec. It is now the world's most-produced grain.

How to grow

Sow seeds after the last frost in warm, rich soil.

Plant in blocks (not rows) for wind pollination.

Keep consistently moist, especially during tasseling.

Harvest when silks turn brown, 60–100 days.

Choosing and storing

Choose ears with green, fresh husks and brown silks.

Kernels should be plump and full to the tip.

Avoid ears with dry or yellowed husks.

Store in the refrigerator with husks on.

Use within 3–5 days — sugars turn to starch quickly.

Blanch and freeze for longer storage.

Preparation

Peel husks and remove silks.

Rinse and cook whole or cut kernels.

Do not overcook — 3–5 minutes is enough.
