Garlic

Pungent, aromatic, and transformative — a cornerstone of savory cooking.

Garlic

History

Garlic has been used for over 5,000 years, originating in Central Asia. It was valued by ancient civilizations for both culinary and medicinal purposes and remains a foundational ingredient in nearly every world cuisine.

How to grow

Plant individual cloves in autumn, 5 cm deep and 15 cm apart.

Choose a sunny spot with well-drained soil.

Mulch heavily to protect through winter.

Harvest when lower leaves yellow; cure for 2–3 weeks.

Choosing and storing

Choose plump, firm bulbs with tight, dry skins.

Avoid bulbs with green shoots, mold, or soft spots.

Store in a cool, dry, ventilated place (not the refrigerator).

Keep bulbs intact until ready to use.

Do not store in plastic — moisture causes mold.

Preparation

Crush with the flat of a knife for easy peeling.

Mince for even distribution in sauces and dressings.

Roast whole bulbs for a sweet, mellow flavor.
