History

Mushrooms have been foraged and cultivated for thousands of years. The Romans prized wild mushrooms, and cultivation began in France in the 17th century with the common button mushroom.

How to grow

Grow from kits or spawn in compost substrate.

Maintain high humidity and cool temperatures.

Keep in dark or very low light.

Harvest when caps open but before spores drop.

Choosing and storing

Choose firm, dry mushrooms with no slime or dark spots.

Avoid mushrooms with a strong, off odor.

Store in a paper bag in the refrigerator.

Use within 5–7 days.

Cook before freezing for longer storage.

Preparation

Brush clean with a damp towel — do not wash.

Trim the stem end if dry.

Slice, quarter, or leave whole as desired.
