History
Sunflowers were domesticated by Native Americans over 4,500 years ago. They were brought to Europe by Spanish explorers and became especially popular in Russia, where they were developed for oil production.
How to grow
Sow seeds after the last frost in well-drained soil.
Space 30–60 cm apart in full sun.
Water moderately; drought-tolerant once established.
Harvest when heads droop and backs turn yellow, 70–100 days.
Choosing and storing
Choose plump, uniform seeds with no off odors.
Avoid shriveled, discolored, or rancid seeds.
Store in an airtight container in a cool, dry place.
Refrigerate or freeze for longer storage.
Use within 6–12 months.
Preparation
Shell if needed (use hulled for convenience).
Toast in a dry pan for deeper flavor.
Chop or grind as needed.
