History

Wheat was domesticated in the Fertile Crescent over 10,000 years ago and became the foundation of Western and Middle Eastern civilizations. It is now the world's second most-produced grain.

How to grow

Sow seeds in autumn (winter wheat) or spring (spring wheat).

Space 15 cm apart in rows, 15 cm between rows.

Keep moderately moist.

Harvest when stalks turn golden, 90–250 days.

Choosing and storing

Choose whole grains or flour with no signs of moisture or pests.

For bread baking, look for bread flour with 12–14% protein.

Store in airtight containers in a cool, dry place.

Whole wheat flour should be refrigerated or frozen.

Use within 1–2 years for dry grains.

Preparation

Mill into flour or cook whole berries.

Rinse whole grains before cooking.

Soak wheat berries overnight before boiling.
