Ingredients

  • 4 large Large yellow onions, thinly sliced
  • 3 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1/4 cup Dark brown sugar
  • 3 tbsp Balsamic vinegar
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Maple syrup
  • 3 sprigs Fresh thyme sprigs
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Water

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium heat until melted.
  2. Add the sliced onions and salt. Cook for 15-20 minutes, stirring occasionally, until softened and moisture is released.
  3. Reduce heat to low and cook for 45-60 minutes, stirring every 5-10 minutes, until deep amber brown.
  4. Add the brown sugar, stirring to coat. Cook 5 minutes until the sugar dissolves and caramelizes.
  5. Pour in the balsamic vinegar, apple cider vinegar, and maple syrup. Add thyme sprigs and pepper. Stir well.
  6. Add the water and simmer over low heat for 10-15 minutes, stirring frequently, until thickened to jam consistency.
  7. Remove from heat and discard thyme sprigs. Let cool slightly, then transfer to clean jars.
  8. Refrigerate for at least 2 hours before serving. The jam will thicken further as it cools.
