Carrot Ginger Soup

A silky, warming soup built on sweet carrots, fresh ginger, and aromatics blended until velvet-smooth. Brightened with a squeeze of lime, it is the perfect bowl for chilly days.

Carrot Ginger Soup

Ingredients

  • 1.5 lb Carrots, chopped
  • 1 medium Yellow onion, diced
  • 2 tbsp Fresh ginger, grated
  • 3 Garlic cloves, minced
  • 4 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Fresh lime juice
  • 2 tbsp Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and saute for 5 minutes until softened.
  2. Add the grated ginger and minced garlic. Cook for another minute until fragrant.
  3. Stir in the ground cumin and cook for 30 seconds to toast the spice.
  4. Add the chopped carrots, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and cover.
  5. Simmer for 20-25 minutes until the carrots are very tender.
  6. Remove from heat and use an immersion blender to puree until completely smooth.
  7. Stir in the fresh lime juice and adjust seasoning. Ladle into bowls and garnish with cilantro.
