Crispy Beer-Battered Onion Rings

Golden, extra-crispy onion rings with a light beer batter. Better than any restaurant version and perfect for dipping.

Crispy Beer-Battered Onion Rings

Ingredients

  • 2 large Large sweet onions, cut into 1/2-inch rings
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Cornstarch
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1 cup Cold beer (lager or pilsner)
  • 1/2 cup Cold sparkling water
  • 4 cups Vegetable oil for frying
  • to taste Salt for finishing

Instructions

  1. Peel the onions and slice into 1/2-inch thick rounds. Separate into individual rings.
  2. In a large bowl, whisk together flour, cornstarch, baking powder, salt, paprika, and garlic powder.
  3. Pour in the cold beer and sparkling water, whisking gently. A few lumps are fine — do not overmix.
  4. Heat the oil in a deep heavy-bottomed pot to 375F. Use a thermometer to maintain temperature.
  5. Working in batches of 4-5 rings, dip each onion ring into the batter, letting excess drip off.
  6. Carefully lower the battered rings into the hot oil and fry for 2-3 minutes, turning once, until golden brown.
  7. Remove with a slotted spoon and drain on a wire rack. Immediately sprinkle with salt while hot.
  8. Repeat with remaining rings, allowing oil to return to 375F between batches. Serve immediately.
