One-Pot Garlic Rice

One-Pot Garlic Rice

Ingredients

  • 1 1/2 cups Long-grain white rice, rinsed
  • 8 cloves Garlic cloves, minced
  • 4 cloves Garlic cloves, thinly sliced
  • 2 1/2 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tbsp Butter (or vegan butter)
  • 1 tsp Soy sauce
  • 3 tbsp Fresh scallions, sliced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. Heat olive oil in a medium pot over medium heat. Add the sliced garlic and fry until golden and crispy, about 2 minutes. Remove and set aside for garnish.
  3. In the same pot, add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the rinsed rice and toast for 1 minute, stirring to coat each grain in the garlic oil.
  5. Pour in the vegetable broth, soy sauce, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes.
  6. Remove from heat and let rest covered for 5 minutes. Fluff with a fork, fold in butter and scallions, and top with the crispy garlic slices.
