Ingredients
- 20 cloves Garlic cloves, thinly sliced
- 2 medium Yellow onions, sliced
- 4 cups Vegetable broth
- 1/2 cup Dry white wine
- 1 tsp Fresh thyme leaves
- 1 leaf Bay leaf
- 2 tbsp Olive oil
- 1 tbsp Butter
- 4 slices Country bread, sliced and toasted
- 1 cup Gruyère cheese, grated
- to taste Salt and pepper
Instructions
- Heat olive oil and butter in a large pot over medium-low heat. Add sliced onions and cook for 10 minutes until soft.
- Add the sliced garlic and cook gently for 8-10 minutes until golden and fragrant, not browned.
- Pour in the white wine and deglaze, scraping any bits from the bottom. Simmer until reduced by half.
- Add vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Ladle the soup into oven-safe bowls. Place a toasted bread slice on top and cover generously with Gruyère cheese.
- Broil for 2-3 minutes until the cheese is bubbly and golden. Serve immediately.
