Honey Glazed Carrots

Tender carrot coins simmered in butter, honey, and a touch of thyme until glossy and caramelized. A quick side dish that pairs beautifully with roasted meats and weeknight dinners.

Honey Glazed Carrots

Ingredients

  • 1 lb Carrots, peeled and sliced into coins
  • 2 tbsp Unsalted butter
  • 3 tbsp Honey
  • 1 tsp Fresh thyme leaves
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Water
  • 1 tbsp Fresh parsley, chopped

Instructions

  1. Peel the carrots and slice them into uniform coins about 1/4 inch thick.
  2. Melt the butter in a large skillet over medium heat. Add the honey and stir until it bubbles.
  3. Add the carrot coins, salt, pepper, and thyme. Toss to coat every piece.
  4. Pour in the water and bring to a gentle simmer. Cover and reduce heat to medium-low.
  5. Cook covered for 12-15 minutes, stirring occasionally, until fork-tender.
  6. Remove the lid and raise heat to medium-high. Cook for 3-5 minutes, tossing frequently, until the liquid evaporates and carrots develop a glossy glaze.
  7. Transfer to a serving dish, garnish with parsley, and serve immediately.
