Creamy Roasted Garlic Spread

Whole garlic bulbs roasted until caramelized and sweet, then blended with cream cheese and herbs into a velvety spread for crackers and bread.

Creamy Roasted Garlic Spread

Ingredients

  • 3 large bulbs Whole garlic bulbs
  • 3 tbsp Olive oil
  • 8 oz (225 g) Cream cheese, softened
  • 1/4 cup Sour cream
  • 2 tbsp Fresh chives, minced
  • 1 tbsp Fresh basil, chopped
  • 1 tbsp Lemon juice
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off each garlic bulb to expose the cloves.
  2. Drizzle 1 tbsp olive oil over each bulb, wrap individually in foil, and roast for 40-45 minutes until cloves are soft and golden.
  3. Let the garlic cool, then squeeze the soft cloves out of their skins into a bowl.
  4. Mash the roasted garlic with a fork until smooth, then add cream cheese, sour cream, lemon juice, salt, and pepper.
  5. Beat with a hand mixer until creamy and well combined, about 2 minutes.
  6. Fold in the chives and basil. Transfer to a serving bowl, drizzle with olive oil, and serve with crackers or toasted bread.
