Family Potato Curry

A warming, budget-friendly Indian potato curry simmered in a spiced tomato-onion gravy. Mild enough for the whole family and ready in one pot with pantry staples.

Family Potato Curry

Ingredients

  • 4 large Potatoes, peeled and cubed
  • 1 Yellow onion, finely chopped
  • 4 Garlic cloves, minced
  • 1 tbsp Ginger, grated
  • 1 (15 oz) can Crushed tomatoes
  • 2 tbsp Curry powder
  • 1 tsp Ground cumin
  • 1 tsp Ground turmeric
  • 1 tsp Garam masala
  • 2 tbsp Vegetable oil
  • 1 1/2 cups Water
  • 2 tbsp Fresh cilantro, chopped
  • 1 1/2 tsp Sea salt

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until golden, about 6 minutes.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Stir in the curry powder, cumin, turmeric, and salt. Toast the spices for 30 seconds, stirring constantly so they do not burn.
  4. Add the crushed tomatoes and cook for 2 minutes, stirring to pick up any browned bits.
  5. Add the cubed potatoes and water. Bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes until the potatoes are tender.
  6. Stir in the garam masala and cook uncovered for 3-5 minutes so the sauce thickens and clings to the potatoes.
  7. Taste and adjust salt. Scatter with fresh cilantro and serve hot with rice or flatbread.
