Ingredients

  • 3 large Red onions, thinly sliced
  • 1 cup Gram flour (besan)
  • 2 tbsp Rice flour
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/2 tsp Turmeric
  • 1 Green chili, finely chopped
  • 2 tbsp Fresh cilantro, chopped
  • 1/4 cup Water
  • 2 cups Oil for frying
  • 1 tsp Sea salt

Instructions

  1. Toss the sliced onions with the salt in a large bowl and let them sit for 5 minutes to soften slightly.
  2. Add the gram flour, rice flour, cumin, coriander, turmeric, chili, and cilantro. Toss to coat the onions evenly.
  3. Sprinkle in the water a little at a time and mix until the flour forms a sticky batter that clings to the onions. Do not add too much water — the batter should be thick.
  4. Heat oil to 350°F (175°C) in a deep pan. Drop small mounds of the onion mixture into the oil, frying in batches.
  5. Fry until deep golden and crisp, about 4-5 minutes per batch, turning once. Transfer to a paper towel to drain.
  6. Serve hot with mint chutney or tamarind sauce.
