Ingredients

  • 14 oz All-butter puff pastry, thawed
  • 3 Yellow onions, thinly sliced
  • 8 oz Soft goat cheese
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Fresh thyme leaves
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Caramelize the onions: heat olive oil in a pan over medium-low heat and cook the onions for 30-40 minutes, stirring often, until deeply golden. Deglaze with balsamic vinegar.
  3. Roll the pastry into a 12-inch round on the prepared sheet and prick all over with a fork.
  4. Spread the caramelized onions over the pastry, leaving a 1-inch border. Crumble the goat cheese on top.
  5. Bake for 25-30 minutes until the pastry is golden and puffed.
  6. Finish with thyme leaves, salt, and pepper. Cool slightly before slicing.
