Roasted Chicken with Thyme & Lemon

Roasted Chicken with Thyme & Lemon

Ingredients

  • 4 lbs Whole chicken
  • 2 Lemons, halved
  • 6 Fresh thyme sprigs
  • 1 Garlic head, halved
  • 2 tbsp Olive oil
  • 1 tbsp Sea salt
  • 1 tsp Black pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the chicken completely dry with paper towels.
  2. Rub the chicken all over with olive oil, salt, and pepper, including under the skin.
  3. Stuff the cavity with lemon halves, garlic head, and 4 thyme sprigs.
  4. Tie the legs together with kitchen twine and tuck the wings under the body.
  5. Roast for 1 hour 15 minutes, basting twice, until a thermometer reads 165°F in the thigh.
  6. Rest the chicken for 15 minutes before carving. Garnish with remaining thyme.
