Tabbouleh Salad

A vibrant Lebanese salad bursting with parsley, mint, bulgur, and tomatoes in a lemony dressing. Fresh, herbaceous, and lighter than most grain salads.

Tabbouleh Salad

Ingredients

  • 1/2 cup Fine bulgur wheat
  • 1 cup Boiling water
  • 2 bunches Fresh parsley, finely chopped
  • 1/2 bunch Fresh mint, finely chopped
  • 1 cup Cherry tomatoes, finely diced
  • 3 Green onion, finely sliced
  • 3 tbsp Lemon juice
  • 3 tbsp Extra virgin olive oil
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

Instructions

  1. Place the bulgur in a bowl and pour the boiling water over it. Cover and let it soak for 20 minutes until tender. Fluff with a fork and let cool.
  2. Finely chop the parsley, mint, tomatoes, and green onions. A sharp knife is key — bruised herbs turn dark and bitter.
  3. Whisk the lemon juice, olive oil, salt, and pepper in a small jar.
  4. Combine the cooled bulgur, herbs, and vegetables in a large bowl.
  5. Pour the dressing over and toss everything together thoroughly. Let it rest for 10 minutes so the bulgur absorbs the dressing.
  6. Taste and adjust lemon and salt. Serve at room temperature or chilled, with crisp lettuce leaves for scooping.
